Appropriately Titled

Enjoying food and healthy eating can go hand in hand if you know how to do it, and Ellie Krieger obviously knows how to do it well! These recipes are so tasty that they seem like they shouldn't be healthy, and they're so fast that it seems like magic. As a busy mom I sorely needed a recipe guide that would appeal to my junk-addicted kids and wouldn't leave me in the kitchen for hours at a time. It's not preachy, it's not loaded with too many expensive specialty items, and each completed recipe is met with approval from the entire (picky) family. I will definitely look forward to my next Ellie Krieger cookbook purchase.

So Easy is so easy!

One of my favorite cookbooks. I use this all the time. The title is absolutely correct. These recipes are very easy, enough so that even I would cook them on a work night, and the ones I've tried are delicious! Nice to be able to cook tasty food that is healthy. Of particular note, this book provides recipes for a whole meal, including calories & nutrition, however, I don't often cook all the components. What I like is that, in the back of the book, Ellie Krieger also breaks out the calories/details for each food in the meal, so I can pick and choose what I want to make and still know the nutritional value.

Super yummy and easy

My first recipe that I made from this blew my socks off. It was made using plain greek yogurt, canned red salmon, fresh dill, lemon zest and juice, mayonaise, minced scallions,
chilled bow-tie pasta, salt and pepper, on a bed of romaine lettuce. I mixed up the dressing in the food processor, then mixed in the scallions, pasta and salmon, put it on the lettuce and wow! was it good, better even than the ingredients sound. No oil or vinegar even but a great tasting creamy dressing nontheless.

Many recipes use greek yogurt which I love. I made the recipe for cold cucumber soup using greek yogurt and it's delicious. Four cups of greek yogurt with one peeled cucumber, fresh dill, mixed up in the food processor, and some chopped tomato on top. It doesn't get easier than this. I am a fan of cold cucumber soup on a hot day but stopped making it since I didn't want to use all that cream and sour cream my old recipe called for.

All the recipes in this book are like this, super easy, using ingredients I wouldn't think of using together for a taste sensation that is incredible. There is not one recipe in here I don't want to make. And so easy! These are the kind of light easy recipes I love, that don't involve cooking. Mix them up or combine the ingredients and eat.

The salad section in particular is great, something as simple as putting chopped strawberries and mozerella cubes on a salad for instance is something creative and delicious. There is also a sandwich section that sounds amazing.

Fresh healthy ingredients combined in new ways make this book a winner. I will be using this almost every day.
